Hi y'all!
We've had a terrific holiday with family and friends, and after that part, we had an even more terrific holiday just the four of us down in San Diego, and then we had a good time house-sitting in the evenings and heave-ho, letting-go at our house. Praise God for all His goodness!
And I'm sure (uh-huh) that sometime soon I will catch up with email and posting and such, but right now I'm just excited to have a REAL LIVE MENU for the next two weeks, after all the holiday nuttiness. As always, if you want to share your own menu in the comments, please do, I'd love to read about what my friends are cooking.
And, without more ado:
Monday: fajita turkey burgers with avocado salsa - a Cooking Light recipe I've been wanting to make for quite awhile now - and mango on the side
Tuesday: freezer meal and oranges
Wednesday: Indian lentil pilaf and broiled grapefruit
Thursday: Asian spaghetti (this should totally have a better name) and Asian apple-pears
Friday: N/A
Saturday: grilled cheese sandwiches and tomato soup (and a wedding!)
Sunday (picnic): tuna salad
Monday: Asian-style beef stew with sweet potatoes
Tuesday: freezer meal with canned fruit
Wednesday: split pea soup and corn bread (this is just one of my favorite meals ever ever ever)
Thursday: crispy salmon cakes and canned fruit
Friday: N/A
Saturday: ham omelettes
Sunday (picnic): chicken noodle soup (in thermos) and crackers
Looking at this menu, I'm realizing that I've a sucker for any recipe that has garlic, ginger and soy sauce in it. Luckily, Adam never gets tired of that terriyaki taste either. Truly, who would want to live in a world without the stinky rose?
Happy New Year everyone!
-Jess
p.s. to my great delight, I am now (thanks to birthday and Christmas money) a proud subscriber to Vegetarian Times and Cooking Light. I can't wait for my first issues!
